Jean-Claude Mas, independent winemaker, fourth generation grape grower, first generation winemaker and owner of Domaines Paul Mas, is a leader in fine winemaking in the Languedoc region of the South of France. Since taking the helm of the family winery in 2000, he has prioritized sourcing the highest quality grapes from twelve privately owned estates and premier growers in the Languedoc to make wines of authenticity and refinement. The Syrah vines are between 25- and 35-year old, the Grenache 30-year old and the Mourvèdre 18-year old. The soil type is clay and limestone with fossils and limestone rocks. The wine is aged for nine months in French oak barrels (Seguin Moreau, François Frères) and American (Seguin Moreau). 30% new oak barrels, 35% one-year-old oak barrels, 35% two-year-old oak barrel.TASTING NOTES
Amethyst color. Nose is complex with blackcurrants, violet, blackberries, turning to cacao and spices. A full bodied wine. Aromas of peanut butter, cocoa, and dried berries with a silky, dry-yet-fruity medium body and a tangy, dark berry tart, apple sauce, cedar, and mineral nuanced finish with chewy tannins. Pairs well with beef, lamb, or game meats, as well as strong cheeses.
