Paul Mas wines are the result of a harmonious symbiosis between an extraordinary region, capable of producing fantastic fruits, a passion for the vineyards, a true respect for the grapes during vinification and the talent of blending and ageing the wines: this is the Paul Mas style.
The legend of Vinus, the heron, started on the Hérault River banks, at the foot of Château Paul Mas in Pézenas. Château Paul Mas is made of 2 Estates: the castle and a 25-ha vineyard in Conas, near Pézenas, the cellar and an 85-ha vineyard, in Nicole, near Montagnac. This is where we produce Vignes de Nicole wines.

Grape Varieties
56% Cabernet Sauvignon, 44% Merlot

Destemming and separate winemaking for each grape. Traditional maceration : 7 to 12 days varieties at a maximum temperature of 26°C. 100% of the blending is aged in oak barrels (new and up to 4 years old), 80% American and 20% French for 7 months. Malolactic fermentation in oak barrels.

Intense ruby color with purple hints.

Elegant and complex with aromas of ripe black fruits, blackcurrant combined with spicy notes such as licorice and vanilla.

A well-balanced wine with smooth tannins and a long finish, on cacao notes.
