Paul Mas wines are the result of a harmonious symbiosis between an extraordinary region, capable of producing fantastic fruits, a passion for the vineyards, a true respect for the grapes during vinification and the talent of blending and ageing the wines: this is the Paul Mas style.
The legend of Vinus, the heron, started on the Hérault River banks, at the foot of Château Paul Mas in Pézenas. Château Paul Mas is made of 2 Estates: the castle and a 25-ha vineyard in Conas, near Pézenas, the cellar and an 85-ha vineyard, in Nicole, near Montagnac. This is where we produce Vignes de Nicole wines.

Grape Varieties
40% Chardonnay, 25% Sauvignon, 25% Viognier, 10% Picpoul

Destemming of the grape, each grape variety is vinified separately at a very low temperature racking. One month fermentation under low controlled temperature (63F). End of fermentation in barrels for the Chardonnay and the Viognier where they will be aged for 3 months.

Clear and brilliant color with green tints.

Complex with quintessence of passion fruit, white currents and pear aromas with brioche notes.

Fruity, fresh and creamy with a good balance.
