Limestone and clay, Mediterranean climate. Destemming of the grape, each grape variety is vinified separately at a very low temperature racking. One month fermentation under low controlled temperature (63°F). End of fermentation occurs in barrels for the Chardonnay and the Viognier where they will be aged for three months.TASTING NOTES
Clear and brilliant color with green tints. Complex with quintessence of passion fruit, white currents and pear aromas with brioche notes. Fruity, fresh and creamy with a good balance. Serve at 50°F with fish, shellfish, white meat, cheeses, salads.
