Since the 19th Century, generations of the Pillot family have cultivated the hills of Chassagne-Montrachet. While father Fernand is approaching retirement, his son Laurent cultivates and harvests nearly 14.6 hectares of land spread over 22 different appellations of red & white wines.
The father-and-son team focuses tirelessly on maintaining quality with their practices: low yields, minimal use of fertilizer and strict hygiene. All of their wines are vinified and matured in a modern winery but Laurent pays special attention to keep with traditional Burgundian practices: barrel fermentation for the whites, minimal stirring of the lees, and aging the wines in French oak barrels from a variety of forests and coopers.

fermentation is trationally started with regular cap punching, thus enabling
very small temperature regulations of the fermanting grapes. Then aged in
French oak barrels (20% new). Bottled at the winery after aging for 12

Expressing spring violets and red fruit

An intense mouthfeel with firm tannins. Uts character confirms it as a wine to age for 3-5 years.
