Since the 19th Century, generations of the Pillot family have cultivated the hills of Chassagne-Montrachet. While father Fernand is approaching retirement, his son Laurent cultivates and harvests nearly 14.6 hectares of land spread over 22 different appellations of red & white wines.
The father-and-son team focus tirelessly on maintaining quality with their practices: low yields, minimal use of fertilizer and strict hygiene. All of their wines are vinified and matured in a modern winery but Laurent pays special attention to keep with traditional Burgundian practices: barrel fermentation for the whites, minimal stirring of the lees, and aging the wines in French oak barrels from a variety of forests and coopers.

Vinification
The vines grow on dense clay and limestone soils with significant stony limestone deposits, which are located at 750 feet above sea level. Pillot’s Morgeot vines are in the lieu-dit of Fairendes, the uppermost slopes of Morgeot adjacent to 1ers Crus Caillerets & Champgains.

Taste
An aromatic wine which tastes of white fruits and oranges framed by well-integrated oak and a very generous and powerful mouthfeel. Can age for 3 to 7 years.
