There is a little road along the Martinollet small river that winds through garrigue, vineyards and olive trees, and takes you to Côté Mas. This modest estate sits in a region rich with heritage. Indeed, close by is the Saint Hilaire Abbey, where, back in 1531, the sparkling wine method was actually discovered. The first bubble, Prima Perla, was born! Then you have the legacy of the Cathar people, those men and women persecuted by the Catholic Church in the medieval times, a period in history that forged both the character and the landscapes of the place. Lastly, the rugged climate and topography create superb terroirs that produce fine chardonnay, mauzac or pinot noir grapes. Our cuvees reflect this heritage; our wines are faithful to their terroir and origins.

Entire bunches pressing out with pneumatic press.
Racking at low temperature. Fermentation at controlled temperature.
Traditional method: first fermentation in vat then bottle fermentation follows (second fermentation). Bottles will be resting for 9 months at least on laths in air-conditioned cellar. Bottle disgorging is done, then we add a « liqueur d’expédition » and we finish with the cork plugging.

Bright and limpid yellow, fine and numerous bubbles.

Intense and refined, white flowers aromas. Fresh in palate with elegant bubbles.
